The honey coloured spirit is gently matured in ex-bourbon casks before being finished with the unique qualities of locally sourced Irish Oak to impart additional colour and flavour, crafting a truly exceptional Irish Rum.
Made using local spring water and premium grade sugar cane molasses this white Irish rum is distilled using a combination of Pot and Column stills before being vessel rested to ensure balance and roundness of flavour.
Using a local recipe inspired by the 7th-century Benedictine monks of the nearby Fore Abbey, this smooth, full body Poitin is distilled using premium malt barley, oats and the local spring water.
